    Preheat Oven

    Preheat your oven to 150°C (300°F).

    Prepare Ribs

    Rub the pork ribs with olive oil, salt, black pepper, paprika, and garlic powder. Ensure an even coating.

    Cook Ribs

    Place the ribs on a baking tray and cover with aluminum foil. Bake for 2.5 to 3 hours, until tender.

    Add BBQ Sauce

    Remove the foil, brush the ribs with BBQ sauce, and broil for an additional 10-15 minutes until caramelized.

    Prepare Corn

    Grill or boil the corn on the cob until tender, about 10-15 minutes.

    Mix Sauce

    In a bowl, combine mayonnaise, crumbled cotija cheese, and chili powder.

    Coat Corn

    Once the corn is cooked, slather the mixture over the corn evenly.

    Finish with Lime

    Squeeze fresh lime juice over the corn before serving.

Papas Bravas

    Prepare Potatoes

    Wash and cut the potatoes into wedges. Soak in water for 30 minutes, then drain and dry.

    Heat olive oil in a deep pan. Fry the potatoes in batches until golden and crispy, about 5-7 minutes per batch.

    Cook Bacon

    In a separate pan, cook the bacon until crispy. Remove and crumble.

    In the same pan used for bacon, add the queso blanco, paprika, salt, and black pepper. Stir until melted and well combined.
