Seasoned Beef Enchiladas

Prepare the Beef
In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat. Stir in taco seasoning and refried beans, mixing well.

Assemble Enchiladas
Preheat the oven to 350°F (175°C). In a baking dish, spread a thin layer of enchilada sauce. Take a corn tortilla, fill it with the beef mixture, roll it up, and place it seam-side down in the baking dish. Repeat with remaining tortillas.

Add Sauce and Cheese
Pour the remaining enchilada sauce over the rolled tortillas and sprinkle shredded cheese on top.

Bake
Bake in the preheated oven for about 25 minutes, or until the cheese is bubbly and golden.
Crispy Beef Tacos

Cook the Ground Beef
In a skillet, cook the ground beef over medium heat until browned. Drain excess fat and add taco seasoning, mixing until well combined.

Prepare Tacos
Fill each taco shell with the seasoned beef. Top with shredded lettuce, diced tomato, shredded cheese, and a dollop of sour cream.
Chicken Tamales with Green Sauce

Prepare the Masa
In a large bowl, combine corn masa and chicken broth. Mix until a dough forms. Soak corn husks in warm water for about 30 minutes.

Assemble Tamales
Take a soaked corn husk, spread a layer of masa dough on it. Add shredded chicken and a spoonful of green salsa. Roll the husk and fold the bottom to secure.

Steam Tamales
Place tamales upright in a steamer. Steam for about 1 hour, or until the masa is firm and cooked through.
Pork Tamales with Red Sauce
