Method

Prepare Salmon

    Make the Glaze

    In a small bowl, mix together honey, chipotle in adobo sauce, olive oil, salt, and black pepper until well combined.

    Glaze the Salmon

    Place the salmon fillets in a baking dish and pour the honey chipotle glaze over them, ensuring they are evenly coated. Let it marinate for 15 minutes.

    Bake the Salmon

    Preheat the oven to 375°F (190°C). Bake the marinated salmon for 15-20 minutes or until cooked through and flakes easily with a fork.

Prepare Cilantro Rice

    Cook the Rice

    In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of white rice, reduce the heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and the water is absorbed.

    Add Cilantro and Lime

    Once the rice is cooked, remove it from heat and fluff with a fork. Stir in chopped fresh cilantro and lime juice.

Prepare Black Beans

    Sauté the Garlic

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

    Cook the Black Beans

    Add the canned black beans (drained and rinsed) to the skillet, along with cumin and salt. Cook for 5-7 minutes until heated through.

Prepare Pico de Gallo

    Chop the Vegetables

    Finely chop the tomatoes, red onion, jalapeño, and fresh cilantro. Combine in a bowl.

    Add Lime Juice

    Drizzle lime juice over the chopped vegetables, mix well, and season with salt to taste.
