Preparation

    Prepare the Shrimp

    Peel and devein the jumbo shrimp, leaving the tails on. Make a slit along the back of each shrimp to create a pocket for the filling.

    Make the Filling

    Finely mince the habanero pepper, removing seeds for less heat if desired. In a bowl, mix the minced habanero with crumbled queso fresco. Season with salt and black pepper to taste.

Assembly

    Stuff the Shrimp

    Take a spoonful of the habanero and queso fresco mixture and stuff it into each shrimp pocket. Press the shrimp gently to secure the filling.

    Wrap in Bacon

    Wrap each stuffed shrimp with a slice of smoked bacon, securing with a toothpick if necessary.

Cooking

    Prepare the Grill

    Preheat the grill to medium-high heat and lightly oil the grates with olive oil to prevent sticking.

    Grill the Shrimp

    Place the bacon-wrapped shrimp on the grill and cook for about 3-4 minutes on each side, until the bacon is crispy and the shrimp are cooked through.

    Make the Honey Chipotle Glaze

    In a small bowl, mix honey and chipotle powder together until well combined.
