Preparation of Chicken

Season the Chicken
In a bowl, mix together the cumin, garlic powder, onion powder, salt, and black pepper. Rub this seasoning mixture evenly over the chicken breasts.

Grill the Chicken
Heat a grill or grill pan over medium-high heat. Add olive oil to the grill. Place the seasoned chicken breasts on the grill and cook for about 6-7 minutes per side or until fully cooked (internal temperature reaches 165°F). Remove from the grill and let rest for a few minutes before slicing.

Place one flour tortilla on a flat surface. Sprinkle half of the shredded Monterey Jack cheese on one half of the tortilla. Add a layer of sliced grilled chicken on top of the cheese, then sprinkle the remaining cheese over the chicken. Fold the tortilla in half to cover the filling.

Cook the Quesadilla
Heat a non-stick skillet over medium heat. Add a small amount of olive oil if desired. Place the folded quesadilla in the skillet. Cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese has melted. Remove from the skillet and slice into wedges.
