Grilled Chicken Fajitas Recipe

For the Grilled Chicken

    Marinate the Chicken

    In a bowl, mix the olive oil, lime juice, chili powder, cumin, garlic powder, salt, and black pepper. Add the chicken breasts and coat them well. Cover and marinate in the fridge for at least 30 minutes.

    Grill the Chicken

    Preheat the grill to medium-high heat. Remove the chicken from the marinade and grill for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes before slicing.

For the Sautéed Peppers and Onions

    Prepare the Vegetables

    While the chicken is grilling, slice the bell peppers and onion into thin strips.

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add the sliced peppers and onions. Season with salt and pepper. Sauté for about 5-7 minutes, until the vegetables are tender and slightly charred.

For the Homemade Flour Tortillas

    Make the Dough

    In a large bowl, combine the flour, baking powder, and salt. Add the lard or shortening and mix until crumbly. Gradually add warm water until a soft dough forms.

    Roll and Cook the Tortillas

    Divide the dough into 10 equal balls. Roll each ball out into a thin circle. Heat a skillet over medium-high heat and cook each tortilla for about 1 minute on each side until lightly browned.

For the Sides

    Prepare the Sides

    Prepare the pico de gallo, guacamole, and any available sides like Mexican rice and frijoles a la charra. Set them out in small bowls for serving.
