Filling Preparation

Cook the Meat
In a large skillet over medium heat, add olive oil. Once hot, add chopped onions and cook until translucent, about 3-4 minutes.

Add Garlic and Spices
Stir in minced garlic and cook for an additional minute. Add ground beef or pulled chicken, cumin, chili powder, salt, and pepper. Cook until the meat is browned and cooked through, about 8-10 minutes.

Drain and Cool
If using ground beef, drain excess fat. Remove from heat and let the filling cool slightly.

Warm the Tortillas
In a dry skillet or microwave, warm the corn tortillas until pliable, about 30 seconds per tortilla.

Fill the Tortillas
Place about 2-3 tablespoons of the meat filling down the center of each tortilla. Roll tightly and secure with a toothpick if needed.

Fry the Flautas
In a deep frying pan, heat oil over medium-high heat. Once hot, carefully place flautas in the oil, frying in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Arrange the flautas on a serving plate. Drizzle with pork green chili sauce.

Serve with sour cream and Cholula hot sauce on the side, allowing guests to add to their taste.
