Method

Preparation of Protein

  1. 1

    Marinate the Chicken

In a large bowl, combine the chicken breast, olive oil, and fajita seasoning. Mix well to ensure the chicken is evenly coated. Let it marinate for at least 30 minutes (or up to 2 hours) in the refrigerator.

  2. 2

    Grill the Chicken

Preheat a grill or grill pan over medium-high heat. Grill the marinated chicken for about 6-7 minutes per side, or until fully cooked (internal temperature should reach 75°C/165°F). Remove from grill and let rest for a few minutes before slicing into strips.

Preparation of Vegetables

  1. 3

    Slice the Vegetables

While the chicken is marinating, slice the bell peppers and onion into thin strips.

  2. 4

    Sauté the Vegetables

In a large skillet, heat a tablespoon of olive oil over medium heat. Add the sliced bell peppers and onions. Sauté for about 5-7 minutes, or until the vegetables are tender and slightly caramelized. Season with salt and pepper to taste.

Assembly and Serving

  1. 5

    Warm the Tortillas

In a dry skillet or microwave, warm the flour tortillas until they are soft and pliable.

  2. 6

    Assemble the Fajitas

On each tortilla, place a few strips of grilled chicken, sautéed peppers, and onions. Add any desired toppings such as sour cream, shredded cheese, salsa, or guacamole.

  3. 7

    Serve

Fold the tortillas around the filling and serve immediately while hot.
