Method
Prepare the Protein
- 1
For Pulled Chicken
In a skillet over medium heat, add the pulled chicken and warm through, stirring occasionally to ensure it is heated evenly.
- 2
For Ground Beef
If using ground beef, brown it in a skillet over medium heat. Cook until fully browned and season with salt, pepper, and any desired spices like cumin and chili powder.
Fry the Tortillas
- 3
In a large skillet, heat the vegetable oil over medium-high heat until it is hot. Test by adding a small piece of tortilla; it should sizzle immediately.
- 4
Carefully place a corn tortilla in the hot oil. Fry for about 30-45 seconds on each side until crispy and golden brown. Use tongs to flip the tortilla.
- 5
Once fried, remove the tortilla and place it on a paper towel-lined plate to absorb excess oil. Repeat with the remaining tortillas.
Assemble the Dish
- 6
On each crispy tortilla, add a layer of pulled chicken or ground beef.
- 7
Top with a handful of shredded lettuce and a spoonful of pico de gallo.
- 8
Sprinkle with both Monterey Jack and Cotija cheese.
- 9
Serve with a side of warm Mexican rice.
