Cook the Meat
In a large skillet, brown the ground beef over medium heat until fully cooked, breaking it up with a spatula as it cooks. Drain any excess fat.

Spice It Up
Stir in the ground cumin, chili powder, salt, and black pepper. Mix well and cook for an additional 2-3 minutes. Remove from heat and let cool slightly.

Mix in Cheese
In a bowl, combine the cooked meat mixture with cheddar cheese, Monterey Jack cheese, and softened cream cheese. Mix until well incorporated.

Prep the Tortillas
Preheat the oven to 350°F (175°C). In a separate pot, warm the corn tortillas in a little oil or microwave them for a few seconds until pliable.

Fill the Tortillas
Take one warmed tortilla, place a generous amount of the filling in the center, and roll it up. Place seam-side down in a greased 9x13 inch baking dish. Repeat with remaining tortillas.

Add Enchilada Sauce
Once all tortillas are filled and arranged in the baking dish, pour the red enchilada sauce evenly over the top, covering all the enchiladas.

Bake
Sprinkle any remaining cheese on top of the sauce. Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden.

Serve
Remove from the oven and let cool for a few minutes. Serve hot, garnished with a dollop of sour cream and chopped cilantro.
