Preheat the Oven
Preheat your oven to 375°F (190°C).

Prepare the Chicken Filling
In a large mixing bowl, combine the shredded chicken, ground cumin, garlic powder, onion powder, salt, and black pepper. Mix until well incorporated.
Assembling the Enchiladas

Soften Tortillas
In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.

Fill and Roll
Place about 1/4 cup of the chicken mixture in the center of each tortilla, roll it up tightly, and place seam-side down in a greased baking dish.
Baking

Add Sauce and Cheese
Pour the red enchilada sauce evenly over the rolled tortillas in the baking dish. Sprinkle the shredded cheese on top.

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Garnish and Serve
Remove from the oven and let cool for a few minutes. Garnish with chopped cilantro and a dollop of sour cream before serving.
