Prepare the Enchilada Filling

    Sauté the Onions

    In a large skillet, heat olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5-7 minutes.

    Mix the Filling

    In a mixing bowl, combine sautéed onions, softened cream cheese, shredded cheese, salt, and black pepper. Mix until well combined.

Prepare the Carne Sauce

    Cook the Ground Beef

    In a medium saucepan, brown the ground beef over medium heat until fully cooked, about 8-10 minutes. Drain excess fat.

    Add Vegetables and Spices

    Add diced onion and minced garlic to the browned beef. Cook until the onion is soft, about 3-4 minutes.

    Add Sauce Ingredients

    Stir in tomato sauce, chili powder, cumin, salt, black pepper, and water. Simmer for 10 minutes to combine the flavors.

Assemble the Enchiladas

    Prepare Tortillas

    Warm the corn tortillas in a dry skillet or microwave for a few seconds to make them pliable.

    Fill the Tortillas

    Place about 2-3 tablespoons of the cheese filling in the center of each tortilla. Roll them tightly and place seam-side down in a baking dish.

    Top with Carne Sauce

    Once all tortillas are filled and placed in the dish, pour the carne sauce evenly over the enchiladas. Sprinkle additional shredded cheese on top.

Bake the Enchiladas

    Bake

    Preheat the oven to 350°F (175°C). Bake the enchiladas for 20-25 minutes or until the cheese is melted and bubbly.

Serve the Enchiladas

    Garnish and Serve

    Remove enchiladas from the oven. Top with sour cream and chopped cilantro before serving. Enjoy!
