Marinated Skirt Steak

Marinate the Steak
In a bowl, combine olive oil, lime juice, minced garlic, ground cumin, chili powder, salt, and black pepper. Mix well. Add the skirt steak to the marinade, ensuring it is fully coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Make Pico de Gallo
In a bowl, combine diced tomatoes, onion, minced jalapeño, chopped cilantro, lime juice, and salt. Mix well and let sit for at least 10 minutes for flavors to meld.
Mexican Rice

Cook the Rice
In a saucepan, heat olive oil over medium heat. Add diced onion and sauté until translucent. Add the rice and stir for 2 minutes. Pour in chicken broth and tomato sauce, add salt, and bring to a boil. Reduce heat, cover, and simmer for 20 minutes or until rice is cooked and liquid is absorbed.
