Method
Camarones Preparation

Peel and devein the jumbo shrimp, leaving the tails intact. Make a slit along the back of each shrimp.

Fill each shrimp with about 2 tablespoons of shredded Monterey Jack cheese and a few diced jalapeños.

Wrap each stuffed shrimp with a slice of bacon, securing it with a toothpick if necessary.

Make Guacamole
In a bowl, mash the ripe avocado. Stir in diced tomato, chopped cilantro, lime juice, and salt to taste.
