Method

Camarones Preparation

    Prepare the Shrimp

    Peel and devein the jumbo shrimp, leaving the tails intact. Make a slit along the back of each shrimp.

    Stuff the Shrimp

    Fill each shrimp with about 2 tablespoons of shredded Monterey Jack cheese and a few diced jalapeños.

    Wrap with Bacon

    Wrap each stuffed shrimp with a slice of bacon, securing it with a toothpick if necessary.

    Cook the Shrimp

    Preheat a grill or skillet over medium heat and cook the bacon-wrapped shrimp until the bacon is crispy and shrimp is cooked through, about 4-5 minutes per side.

Charro Beans

    In a pot, cook diced chorizo and onion over medium heat until the chorizo is browned. Add canned pinto beans and simmer for 10 minutes. Stir in chopped cilantro and season with salt to taste.

Mexican Butter

    In a small bowl, mix softened unsalted butter with garlic powder, chili powder, and lime zest until well combined.
