Filling and Dough

Method

Preparation and Cooking

  1. 1

    Make the Dough

In a bowl, mix the all-purpose flour with water until a dough forms. Knead on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

  2. 2

    Prepare the Filling

In a large mixing bowl, combine ground pork, chopped cabbage, grated carrot, green onions, minced garlic, minced ginger, soy sauce, sesame oil, salt, and black pepper. Mix thoroughly until well combined.

  3. 3

    Form the Potstickers

Divide the dough into small pieces (about 1 inch in diameter). Roll each piece into a thin circle. Place a spoonful of filling in the center of each circle, then fold the dough over to form a half-moon shape. Pinch the edges to seal.

  4. 4

    Cook the Potstickers

In a non-stick skillet, heat a little oil over medium heat. Add the potstickers in a single layer and cook until the bottoms are golden brown, about 4 minutes. Add a small amount of water (enough to cover the bottom of the pan) and cover immediately. Steam for about 5-7 minutes until the water has evaporated.

  5. 5

    Serve

Serve the potstickers hot with your choice of dipping sauce, such as soy sauce or a vinegar-based sauce.
