    Marinate the Pork

    In a large bowl, combine soy sauce, fish sauce, brown sugar, minced garlic, red chili flakes, and lime juice. Mix well. Add the pork loin to the marinade, ensuring it is well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

    Prepare the Dipping Sauce

    In a small bowl, mix together fish sauce, lime juice, chopped cilantro, and chopped Thai bird chilies. Adjust spiciness to taste. Set aside.

    Cook the Jasmine Rice

    Rinse jasmine rice under cold water until the water runs clear. In a pot, combine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is tender and water is absorbed. Fluff with a fork and keep warm.

    Grill the Pork

    Preheat the grill to medium-high heat. Remove pork from marinade and grill for about 6-8 minutes per side or until fully cooked (internal temperature should reach 145°F or 63°C). Let the pork rest for 5 minutes before slicing it into strips.

    Serve

    Serve the grilled pork strips with jasmine rice on the side and drizzle the tangy dipping sauce over the top or serve it in a small bowl for dipping.
