Prepare the Broth

Simmer the Broth
In a large pot, add beef bones and water. Bring to a boil, then reduce heat to simmer. Add roasted onion, ginger, star anise, cinnamon stick, cloves, and fish sauce. Simmer for at least 2 hours, skimming any foam that rises to the surface.

Season the Broth
After 2 hours, taste the broth and add salt as needed. Continue to simmer for an additional 30 minutes.
Prepare the Noodles and Steak

Cook the Noodles
While the broth is simmering, cook the rice noodles (or fresh egg noodles) according to package instructions. Drain and set aside.

Slice the Steak
Thinly slice the beef steak against the grain. Set aside.
Assemble the Pho

Add Fresh Toppings
Garnish with fresh basil, bean sprouts, lime wedges, sliced chili peppers, and chopped green onions.
