    Prepare the Crust

    Preheat your oven to 180°C (350°F). In a mixing bowl, combine graham cracker crumbs and melted butter. Mix until the crumbs are well coated. Press the mixture into the bottom of a 9-inch springform pan to form a crust. Bake for 10 minutes, then remove and let it cool.

    Make the Cheesecake Filling

    In a large mixing bowl, beat the cream cheese and granulated sugar together until smooth and creamy. Add the sour cream, eggs, and vanilla extract, mixing until fully combined and smooth.

    Bake the Cheesecake

    Pour the cheesecake filling over the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.

    Cool and Refrigerate

    Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.

    Prepare the Berry Sauce

    In a saucepan over medium heat, combine 1 cup of mixed berries (such as strawberries, blueberries, and raspberries) with 2 tablespoons of sugar and 1 tablespoon of lemon juice. Cook until the berries break down and the sauce thickens, about 10 minutes. Strain if desired.
