    Prepare the Marinade

    In a food processor, combine lemongrass, garlic, ginger, soy sauce, honey, fish sauce, black pepper, and salt. Blend until smooth.

    Marinate the Ribs

    Place the pork ribs in a large bowl or a zip-lock bag, and pour the marinade over them. Ensure the ribs are well-coated. Seal and refrigerate for at least 4 hours, preferably overnight.

    Cook the Ribs

    Preheat your grill or oven to 180°C (350°F). Remove the ribs from the marinade and reserve the marinade. Cook the ribs on the grill for about 1.5 hours, or in the oven for 2 hours, basting with the reserved marinade every 30 minutes.

    Prepare the Jasmine Rice

    While the ribs are cooking, rinse 1 cup of jasmine rice under cold water until the water runs clear. Cook according to package instructions, usually 1 cup rice to 1.5 cups water, bring to a boil, then reduce heat and simmer until cooked.

    Serve

    Once the ribs are cooked and tender, remove from heat. Let rest for 10 minutes. Serve with jasmine rice and garnish with fresh cilantro.
