    Prepare the Potatoes

    Peel the potatoes and cut them into thick fries. Rinse in cold water and pat dry with a towel.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches for about 5-7 minutes until golden brown. Remove and drain on paper towels, then season with salt.

    Prepare the Batter

    In a mixing bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add the beer (or sparkling water) while mixing until smooth.

    Fry the Haddock

    Dip each haddock fillet in the batter, allowing excess to drip off. Carefully place into the hot oil and fry for about 4-5 minutes or until the batter is golden and the fish is cooked through. Remove and drain on paper towels.

    Serve

    Plate the fish and chips together, drizzle with malt vinegar, and serve with tartar sauce on the side.
