Cook the Noodles
Bring a large pot of salted water to a boil. Add the noodles and cook according to package instructions until al dente. Drain and set aside.

Prepare the Protein
If using chicken or shrimp, cut into bite-sized pieces. If using tofu, drain and cube it. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat and cook the protein until fully cooked through. Remove from skillet and set aside.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Sauté the chopped garlic, onion, Thai chili, and bell pepper until the vegetables are tender, about 5-7 minutes.

Combine and Flavor
Add the cooked noodles and protein back into the skillet. Pour in the soy sauce, salt, and pepper. Toss everything together and cook for an additional 2-3 minutes until everything is well combined and heated through.

Serve
Garnish with chopped green onions and serve hot.
