Cottage Cheese Preparation

In a large pot, heat the milk over medium heat until it reaches about 190°F (88°C), stirring occasionally to prevent scorching.
2. Add the Acid
Once the milk reaches the desired temperature, remove it from heat and stir in the vinegar or lemon juice. Let it sit for about 5-10 minutes to allow the curds to form.
3. Strain the Curds
Line a colander with cheesecloth and place it over a large bowl. Pour the curds and whey into the colander to separate them. Rinse the curds under cold water to cool them and wash away any remaining whey.
4. Season the Curds
Transfer the curds to a mixing bowl, add salt (and cream, if using) and mix gently to combine.
5. Refrigerate
Cover and refrigerate the cottage cheese for at least 1 hour before serving to allow the flavors to meld.
