Make the Batter
In a mixing bowl, combine the flour, baking powder, salt, black pepper, and cayenne pepper. Gradually whisk in the beer until the batter is smooth and thick.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

Coat the Onion Rings
Remove the onion rings from the water and pat dry with paper towels. Dip each ring into the batter, allowing excess to drip off.

Fry the Onion Rings
Carefully place the battered onion rings in the hot oil, a few at a time. Fry for 3-4 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Serve the crispy onion rings hot with Cajun creole chopper sauce on the side.
