Marinate the Chicken

In a large bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, lemon juice, and salt. Add the chicken pieces and mix well to coat. Cover and marinate for at least 2 hours, preferably overnight in the refrigerator.

Prepare the Coating

In another bowl, mix together all-purpose flour, cornstarch, baking powder, and a pinch of salt. Gradually add water to create a smooth batter.

Heat the Oil

In a large, deep frying pan, heat oil over medium-high heat until hot.

Fry the Chicken

Dip each marinated chicken piece into the batter, allowing excess to drip off. Carefully place in the hot oil and fry in batches until golden brown and crispy, about 8-10 minutes per side. Ensure the internal temperature reaches at least 75°C (165°F).

Drain and Serve

Remove the fried chicken from the oil and place on paper towels to drain excess oil. Serve hot with imli (tamarind) chutney and mint chutney.
