    Prepare the Ingredients

    Clean the gucchi mushrooms thoroughly and soak them in warm water for about 30 minutes, then drain. Slice the button mushrooms. Rinse the basmati rice under cold water until the water runs clear and soak it for 20 minutes.

    Sauté Vegetables

    In a large pot, heat the ghee over medium heat. Add the sliced onions and sauté until they are golden brown. Stir in the minced garlic, grated ginger, and slit green chili, cooking for another 2 minutes.

    Cook the Mushrooms

    Add the gucchi mushrooms and button mushrooms to the pot. Sauté for about 5-7 minutes until they are tender and slightly browned.

    Add Rice and Stock

    Drain the soaked rice and add it to the pot, stirring well to combine. Pour in the vegetable stock and season with salt and black pepper. Bring to a boil.

    Simmer the Pilau

    Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.

    Finish with Truffle Oil

    Remove the pot from heat. Drizzle the truffle oil over the pilau and gently fluff the rice with a fork. Let it sit covered for an additional 5 minutes.
