Preparation

    Prepare the Gol Guppas

    In a mixing bowl, combine semolina, all-purpose flour, baking soda, and salt. Gradually add water and knead to form a soft dough. Cover with a damp cloth and let it rest for 30 minutes.

    Make the Jaljeera

    In a blender, combine mint leaves, cumin seeds, black salt, tamarind pulp, lemon juice, and water. Blend until smooth. Adjust seasoning as needed.

    Prepare the Filling

    Mash the boiled potatoes in a bowl. Add sprouted moong beans, chopped coriander leaves, green chilies, and salt. Mix well to combine.

    Fry the Gol Guppas

    Heat oil in a deep frying pan. Take small portions of the dough and roll them into balls. Flatten slightly and deep fry until golden brown and puffed. Drain on paper towels.

    Assemble

    Poke a hole in each gol guppa, fill with potato and moong mixture, and serve with jaljeera on the side.
