Sausage Ingredients

Method

Sausage Preparation Directions

  1. 1

    Prepare the Meat Mixture

In a large mixing bowl, combine the ground reindeer meat and pork fatback. Mix well to ensure even distribution.

  2. 2

    Add Seasonings

To the meat mixture, add minced garlic, chopped thyme, chopped sage, black pepper, salt, and cayenne pepper. Mix thoroughly until all ingredients are evenly incorporated.

  3. 3

    Prepare the Casings

Rinse the natural hog casings under cold water and soak them in warm water for about 30 minutes. This will make them more pliable for stuffing.

  4. 4

    Stuff the Sausage

Using a sausage stuffer, carefully fill the hog casings with the meat mixture. Be sure to pack the mixture tightly but avoid overstuffing, as this can cause the casings to burst.

  5. 5

    Tie Off the Sausages

Once stuffed, twist the sausages into links of your desired size and tie off the ends with kitchen twine.

  6. 6

    Cook the Sausages

You can either grill, pan fry, or bake the sausages. Cook until they reach an internal temperature of 160°F (71°C), about 15-20 minutes depending on the cooking method.
