    Wash and Slice the Potatoes

    Begin by thoroughly washing the Russet potatoes under cold running water. After cleaning, slice the potatoes very thinly using a mandoline slicer or a sharp knife to ensure even cooking.

    Soak the Potato Slices

    Place the potato slices in a large bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and makes the chips crispier.

Frying the Chips

    Heat the Oil

    In a deep frying pan or a heavy pot, pour the vegetable oil and heat it over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature.

    Dry the Potatoes

    After soaking, drain the potato slices and pat them dry using paper towels to remove excess moisture.

    Fry the Potato Slices

    Carefully add a handful of potato slices to the hot oil, being careful not to overcrowd the pan. Fry them in batches, stirring occasionally, until they turn golden brown and crispy, about 3-5 minutes.

    Drain and Season

    Using a slotted spoon, remove the fried chips from the oil and place them on a paper towel-lined plate to drain excess oil. Immediately sprinkle with salt to taste while they are still hot.

    Repeat the frying process with the remaining potato slices until all chips are cooked.
