Prepare Coleslaw

In a large mixing bowl, combine the finely shredded green cabbage and grated carrot.

In a separate small bowl, whisk together the vegan mayonnaise, apple cider vinegar, maple syrup, salt, and black pepper until smooth.

Pour the dressing over the cabbage and carrot mixture and toss until the vegetables are well coated.

Cover the coleslaw and refrigerate for at least 30 minutes to allow the flavors to meld.
Assemble the Sandwich

Spread 1 tablespoon of vegan mayonnaise on one side of each slice of whole grain sandwich bread.

Layer 2 ounces of plant-based turkey slices on two of the bread slices.

Top the turkey with 2 tablespoons of Russian dressing and a slice of vegan provolone cheese.

Add a generous scoop of prepared coleslaw on top of the cheese.
