    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and bell peppers. Sauté for about 5-7 minutes until they are soft and slightly caramelized. Add the sliced mushrooms and cook for an additional 3-4 minutes until they are tender. Season with salt and black pepper to taste.

    In the same skillet, push the sautéed vegetables to one side and add the remaining 1 tablespoon of olive oil. Add the Impossible ground meat to the skillet. Break it apart with a spatula and cook for about 5-7 minutes, stirring occasionally until browned and fully cooked. Mix in the sautéed vegetables to combine evenly.

Assembling the Sandwiches
