Turkey Preparation

Preheat the Oven
Preheat your oven to 325°F (165°C).

Prepare the Turkey
Rinse the whole turkey under cold water and pat it dry with paper towels.

Season the Turkey
In a small bowl, mix together the salt, black pepper, garlic powder, and onion powder. Rub the turkey all over with olive oil, then season liberally with the spice mixture.

Roast the Turkey
Place the turkey in a roasting pan and roast in the preheated oven for about 13-15 minutes per pound, or until the internal temperature reaches 165°F (75°C).

Rest the Turkey
Remove the turkey from the oven and let it rest for at least 20-30 minutes before pulling the meat off the bones.
Coleslaw Preparation

Combine Ingredients
In a large mixing bowl, combine the shredded cabbage and carrots.

Make the Dressing
In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

Mix Coleslaw
Pour the dressing over the cabbage and carrots, and toss until everything is well coated. Refrigerate for at least 30 minutes to allow flavors to meld.

Pull the Turkey
Once the turkey has rested, pull the meat from the bones and shred it into bite-sized pieces.

Assemble the Sandwich
Slice the sandwich rolls in half. On the bottom half, layer shredded turkey, a slice of provolone cheese, coleslaw, a drizzle of Russian dressing, and a dollop of mayonnaise.

Top with the other half of the roll and serve immediately.
