Cook the Steak
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced ribeye steak, salt, and black pepper. Cook for about 5-7 minutes until the steak is browned and cooked through. Remove and set aside.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onions and mushrooms. Sauté for about 5 minutes until soft and caramelized. If using, add the sliced peppers and cook for an additional 2-3 minutes.

Assemble the Cheesesteak
Slice the hoagie rolls open but not all the way through. Spoon the steak and vegetable mixture into each roll, ensuring even distribution of the melted cheese.

Serve immediately while hot, with any additional hot or sweet peppers on the side.
