    Slice the Chicken

    If not pre-sliced, thinly slice the grilled chicken breast into strips.

    Prepare the Vegetables

    Wash and slice the mushrooms, onion, and sweet bell pepper. If using, slice the hot peppers as well.

Cooking

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook for 2-3 minutes until translucent. Then, add the mushrooms and sweet bell peppers, cooking for an additional 4-5 minutes until softened.

    Combine Chicken and Seasoning

    Add the sliced grilled chicken to the skillet with the sautéed vegetables. Season with salt and black pepper. Stir everything together and cook for another 3-4 minutes until heated through.

Assembling

    Melt the Cheese

    Reduce the heat to low and lay the provolone cheese slices over the chicken and vegetable mixture. Cover the skillet and let it cook for 2-3 minutes until the cheese is melted.

    Prepare the Rolls

    While the cheese is melting, slice the hoagie rolls lengthwise without cutting all the way through. Lightly toast the inside on a skillet if desired.

    Assemble the Sandwich

    Once the cheese is melted, spoon the chicken and vegetable mixture into the hoagie rolls. Add hot or sweet peppers if desired.
