Preparing the Chicken
Marinate the Chicken
In a bowl, combine olive oil, balsamic vinegar, garlic powder, salt, and black pepper. Whisk together until well blended. Add the chicken breasts and coat them evenly with the marinade. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
Grill the Chicken
Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and discard the marinade. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Once cooked, remove from the grill and let rest for 5 minutes before slicing.
Assembling the Salad
Prepare the Salad Base
In a large serving tray or bowl, layer the mixed salad greens as the base.
Add Chicken and Toppings
Slice the grilled chicken breasts into strips and arrange them over the mixed greens. Sprinkle the crumbled gorgonzola cheese and glazed cranberry walnuts on top of the chicken.
Serving
Drizzle with Dressing
Pour the balsamic dressing evenly over the salad just before serving to keep the greens fresh.
Serve
