Preparation of Beef

Season the Beef
Rub the American Wagyu roast beef with salt, black pepper, garlic powder, and onion powder evenly on all sides.

Preheat Oven
Preheat your oven to 250°F (120°C) for a slow roast.

Roast the Beef
Place the seasoned roast beef on a roasting rack in a roasting pan. Insert a meat thermometer into the thickest part of the meat. Roast in the preheated oven until the internal temperature reaches 130°F (54°C) for medium-rare, about 3 to 4 hours.

Rest the Meat
Remove the roast from the oven and tent it loosely with aluminum foil. Let it rest for 20-30 minutes before slicing.
Assembling the Sandwich

Prepare the Vegetables
While the beef is resting, wash and dry the lettuce. Slice the tomatoes and onions into thin rings.

Slice the Roast
Using a sharp knife, thinly slice the rested Wagyu roast against the grain.

Build the Sandwich
Spread a generous amount of mayonnaise on each sandwich roll. Layer the sliced roast beef, followed by provolone cheese, lettuce, tomato slices, and onion rings.

Close the sandwich rolls and slice them in half if desired. Serve immediately.
