Method

Preparation

1

Prepare the Fish

Clean the fish thoroughly and make a few slits on both sides. Rub with olive oil, salt, and pepper. Stuff the cavity with Thai basil and lime slices.

2

Make the Spicy Peanut Sauce

In a bowl, whisk together peanut butter, soy sauce, lime juice, chili paste, honey, and water until smooth. Adjust the consistency with more water if necessary.

3

Prepare the Green Papaya Salad

In a large mixing bowl, combine shredded green papaya, shredded carrots, cherry tomatoes, and green beans. In a separate bowl, whisk together fish sauce, lime juice, sugar, and chili flakes. Pour over the salad and toss to combine. Top with chopped roasted peanuts.

Grilling

4

Grill the Fish

Preheat your grill to medium-high heat. Place the prepared fish on the grill and cook for about 6-8 minutes on each side, or until the fish is cooked through and has nice grill marks.

5

Serve

Serve the grilled fish hot, drizzled with spicy peanut sauce, alongside the green papaya salad.
