    Prepare the Steak

    Remove the porterhouse steak from the refrigerator and let it come to room temperature for about 30 to 60 minutes before cooking.

    Preheat the Grill

    Preheat your wood-fired grill to high heat (around 500°F or 260°C). Ensure the grill grates are clean and well-oiled.

    Season the Steak

    Rub the steak with olive oil, then generously season both sides with kosher salt and freshly ground black pepper. Sprinkle fresh rosemary and minced garlic over the steak.

    Grill the Steak

    Place the porterhouse steak on the hot grill. Sear for about 4-5 minutes on one side until a nice crust forms. Flip the steak and sear the other side for another 4-5 minutes.

    Add Butter

    During the last few minutes of grilling, add butter on top of the steak and let it melt, basting the steak with the melted butter for added flavor.

    Check Doneness

    Use a meat thermometer to check the internal temperature. Aim for 130°F (54°C) for medium-rare, 140°F (60°C) for medium, and adjust cooking time accordingly.

    Rest the Steak

    Once the steak reaches desired doneness, remove it from the grill and let it rest for about 10 minutes. This allows the juices to redistribute.

    Slice the steak against the grain and serve with your choice of sides.
