Preparation

1

Prepare the Tortillas

In a bowl, mix flour, baking powder, and a pinch of salt. Gradually add water until a dough forms. Knead for 5 minutes, then let it rest for 30 minutes. Roll out into thin circles and cook on a hot skillet until lightly browned.

2

Marinate the Steak

Season the wagyu skirt steak with olive oil, salt, black pepper, and lime juice. Let it marinate for at least 30 minutes.

3

Prepare the Lobster and Bone Marrow

Grill lobster tails and bone marrow over medium heat until cooked through and slightly charred, about 5-7 minutes.

4

Cook the Charro Beans

In a saucepan, combine charro beans with chopped tomatoes, bell pepper, and onion. Season with salt and cook until heated through.

Cooking

5

Grill the Steak

Preheat the grill to high. Grill the marinated wagyu skirt steak for about 3-4 minutes per side for medium-rare. Let it rest before slicing.

6

Prepare the Queso

In a saucepan, melt cream cheese and add shredded cheddar cheese along with king crab meat. Stir until smooth and heated through.

7

Assemble the Fajitas

Slice the grilled steak and lobster. Place the sliced meat on homemade tortillas, top with king crab queso, grilled lobster, charro beans, and fresh cilantro.
