Prepare the Sausage

In a large bowl, mix together the ground beef, ground pork, garlic powder, onion powder, smoked paprika, black pepper, salt, red pepper flakes, and parsley until well combined. Shape the mixture into patties or links, depending on your preference.

Cook the Sausage

Heat a skillet over medium heat. Add the sausage patties or links and cook for about 5-7 minutes on each side, or until fully cooked and browned.

Cook the Heirloom Grits

In a saucepan, bring 4 cups of water to a boil. Stir in the heirloom grits and salt. Reduce heat to low and cook, stirring occasionally, until the grits are thick and creamy, about 20-25 minutes. Stir in the butter before serving.

Make the Green Tomato Relish

In a medium saucepan, combine the diced green tomatoes, chopped onion, apple cider vinegar, sugar, salt, and black pepper. Cook over medium heat until the tomatoes are soft and the mixture thickens, about 15-20 minutes. Stir in the cilantro before serving.

Plate the sausage alongside a generous serving of heirloom grits and top with the green tomato relish.
