    Preparation

    1. Remove the dry-aged bone-in NY strip steak from the refrigerator and let it sit at room temperature for about 30-60 minutes before cooking to ensure even cooking.

    Seasoning

    2. Generously season both sides of the steak with kosher salt and freshly ground black pepper.

    Preheat the Pan

    3. Heat a cast-iron skillet or grill pan over medium-high heat. Add olive oil and allow it to heat until shimmering.

    Searing the Steak

    4. Place the steak in the pan and sear for about 4-5 minutes on one side until a crust forms.

    Flipping the Steak

    5. Flip the steak and add the fresh rosemary and garlic cloves to the pan. Sear for another 4-5 minutes for medium-rare or to your desired doneness.

    6. Remove the steak from the pan and let it rest for 10-15 minutes before slicing. This allows the juices to redistribute.
