Combine Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

Mix Wet Ingredients
In another bowl, whisk the milk, egg, melted unsalted butter, and vanilla extract until smooth.

Combine Mixtures
Pour the wet ingredients into the bowl with the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are okay.

Heat the Pan
Heat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or a little butter.

Cook Pancakes
Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.

Serve
Remove from the skillet and keep warm in a low oven while you cook the remaining pancakes. Serve with maple syrup and fresh fruits if desired.
