Grits

1. Prepare the Water

In a medium saucepan, bring 4 cups of water to a boil over high heat.

2. Add Grits

Once the water is boiling, add 1 cup of grits and 1 teaspoon of salt, stirring constantly to prevent clumping.

3. Cook Grits

Reduce heat to low and cover. Cook for about 20-25 minutes, stirring occasionally, until the grits are thick and creamy.

4. Add Butter and Cheese

Remove from heat and stir in 2 tablespoons of butter and, if using, 1 cup of shredded cheddar cheese until fully melted and incorporated.

5. Heat the Pan

In a separate skillet, heat 1 tablespoon of olive oil or butter over medium heat.

6. Cook the Eggs

Crack 2 eggs into the skillet. Sprinkle a pinch of salt and pepper on top. Cook to your desired level of doneness (sunny-side up, over-easy, etc.), about 2-4 minutes.

7. Serve the Eggs

Once cooked, remove the eggs from the skillet and set aside.
