Prepare the Vegetables
Wash and chop the carrots, bell pepper, and green onions. If using fresh corn, cut the kernels off the cob.

Prepare the Rice
If you haven't done so already, cook the rice according to package instructions. For best results, use rice that has been cooked and refrigerated for at least a few hours or overnight.

Sauté the Vegetables
In a large skillet or wok, heat the sesame oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the diced carrots, peas, bell pepper, corn, and green onions. Stir-fry for about 5-7 minutes or until the vegetables are tender.

Add the Rice
Add the cooked rice to the skillet with the sautéed vegetables. Stir well to combine, ensuring that the rice is evenly mixed with the vegetables.

Season the Rice
Pour the soy sauce over the rice mixture. Add salt and black pepper to taste. Continue to stir-fry for an additional 3-5 minutes, allowing the rice to heat through and absorb the flavors.

Stir everything together well to ensure that the eggs and seasonings are evenly distributed throughout the fried rice. Cook for another minute if necessary.
