Cooking the Rice

1. Rinse the Rice

Place the long grain rice in a fine-mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

2. Cook the Rice

In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and water is absorbed. Remove from heat and let sit, covered, for 5 minutes.

Preparing the Noodles

3. Cook the Noodles

Bring a large pot of water to a boil. Add the rice noodles and cook according to package instructions, usually about 4-6 minutes. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.

4. Stir-Fry the Vegetables

In a large skillet or wok, heat sesame oil over medium-high heat. Add minced garlic and sauté for 30 seconds until fragrant. Add the chopped vegetables and stir-fry for about 3-5 minutes until they are tender but still crisp.

5. Combine Noodles and Sauce

Add the drained noodles to the skillet with the vegetables. Pour in the soy sauce and toss everything together to ensure the noodles are evenly coated and heated through, about 2-3 minutes.

6. Garnish

Chop the green onions and sprinkle them over the noodle mixture. Toss again to combine.
