Preparation of Tapioca Pearls

    Mix the Ingredients

    In a mixing bowl, combine 1 cup of tapioca starch with 1 cup of water and 2 tablespoons of brown sugar. If you want colored pearls, add 1 teaspoon of food coloring at this stage. Stir well until the mixture forms a smooth dough.

    Knead the Dough

    Transfer the dough onto a clean, flat surface. Knead the dough for about 5 minutes until it becomes pliable and smooth. If it’s too sticky, sprinkle a little more tapioca starch.

    Form the Pearls

    Pinch off small pieces of the dough and roll them into small balls, about 1/4 inch in diameter. Ensure that they are evenly sized for consistent cooking.

    Dry the Pearls

    Place the formed tapioca pearls on a tray lined with parchment paper. Let them sit for about 30 minutes to firm up slightly.

Cooking the Tapioca Pearls

    Boil the Water

    In a large pot, bring 6 cups of water to a rolling boil.

    Cook the Pearls

    Once the water is boiling, gently drop the tapioca pearls into the pot. Stir gently to prevent them from sticking together. Let them cook for about 15-20 minutes until they become translucent and float to the surface.

    Cool the Pearls

    After cooking, remove the pot from heat and let the pearls sit in the hot water for an additional 10 minutes.

    Drain and Rinse

    Using a slotted spoon, remove the pearls from the pot and transfer them to a strainer. Rinse them under cold water to stop the cooking process and remove excess starch.

    Serve or Store

    You can serve the tapioca pearls immediately in your favorite drinks or store them in a sealed container in the refrigerator for up to 3 days.
