Method
Dough Preparation
- 1
Mix the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Gradually add water while mixing until a dough begins to form.
- 2
Knead the Dough
Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until it becomes smooth and elastic.
- 3
Rest the Dough
Cover the dough with a damp cloth and let it rest for at least 30 minutes to allow it to relax.
Filling Preparation
- 4
Prepare the Filling
In a medium bowl, combine the ground pork, chopped cabbage, chopped green onions, soy sauce, sesame oil, minced ginger, and minced garlic. Mix thoroughly.
Dumpling Assembly
- 5
Roll the Dough
After the dough has rested, roll it out to about 1/8 inch thick and cut out circles of about 3-4 inches in diameter.
- 6
Fill the Dumplings
Place a small spoonful of the filling in the center of each dough circle. Be careful not to overfill.
- 7
Seal the Dumplings
Fold the dough over the filling to create a half-moon shape. Pinch the edges tightly to seal. You can also pleat the edges for a decorative touch.
Cooking
- 8
Prepare the Steamer
Fill a steamer pot with water and bring it to a boil. If using a bamboo steamer, line it with parchment paper or cabbage leaves to prevent sticking.
- 9
Steam the Dumplings
Place the dumplings in the steamer basket, making sure they do not touch. Cover and steam for about 15-20 minutes until the dough is translucent and the filling is cooked through.
- 10
Serve
Remove the dumplings from the steamer and serve hot with soy sauce or your favorite dipping sauce.
