Method

Preparation

  1. 1

    Prepare the Wild Mushrooms

Clean the wild mushrooms thoroughly with a damp cloth or a soft brush to remove any dirt. If they are large, slice them into bite-sized pieces.

  2. 2

    Make Garlic Confit

If you don't have garlic confit, you can make it by simmering peeled garlic cloves in olive oil over low heat for about 30 minutes until soft and golden. Allow to cool before using.

Cooking

  1. 3

    Sauté the Mushrooms

In a large skillet, heat the olive oil over medium heat. Add the prepared wild mushrooms and sauté for about 5-7 minutes until they are tender and golden brown.

  2. 4

    Add Garlic

Add the garlic confit to the mushrooms, mashing it slightly with a fork to release its flavor. Cook for an additional 2-3 minutes, stirring occasionally.

  3. 5

Combine with Cheese and Sour Cream

Reduce heat to low, then stir in the sour cream, grated Gruyere, and shredded mozzarella until the cheeses melt and everything is well combined. Add salt and black pepper to taste.

Finishing Touches

  1. 6

    Garnish and Serve

Remove from heat and stir in the chopped fresh basil. Serve the Wild Mushroom Three Cheese warm, garnished with additional basil if desired.
