Preparation

    Prepare the Seafood

    In a large bowl, combine the shrimp and scallops. Add a pinch of salt and pepper to season. Set aside.

    Chop the Vegetables

    Wash and chop the farm fresh vegetables into bite-sized pieces. Set aside.

    Grate the Cheeses

    Grate the Gruyere cheese and shred the Mozzarella cheese. Mix them together in a bowl and set aside.

    In a large skillet over medium heat, add a splash of olive oil. Add the chopped vegetables and sauté for about 5-7 minutes until tender. Stir occasionally.

    Add the shrimp and scallops to the skillet with the sautéed vegetables. Cook for about 3-5 minutes until the shrimp turns pink and the scallops are opaque.
