Sundried Tomato Cream Sauce

Preparing the Ingredients

Cook the Tortellini
In a large pot of boiling salted water, cook the three cheese tortellini according to package instructions until al dente. Drain and set aside.

Prepare the Broccoli
In the same pot, add the broccoli florets and cook for about 3 minutes until bright green and tender-crisp. Drain and set aside with the tortellini.

Slice the Red Onion
Thinly slice the red onion and set aside.
Making the Sundried Tomato Cream Sauce

Sauté the Aromatics
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sliced red onion, sautéing until the onions are translucent and fragrant, about 3-4 minutes.

Add Sundried Tomatoes
Stir in the sundried tomatoes and cook for an additional 2 minutes.

Incorporate the Cream
Pour in the heavy cream, stirring to combine. Allow the sauce to simmer for about 5 minutes until it thickens slightly.

Season the Sauce
Add salt and black pepper to taste. Stir in the grated Parmesan cheese until melted and well incorporated.

Combine with Pasta and Veggies
Add the cooked tortellini and broccoli to the skillet, tossing to coat everything evenly with the sauce. Cook for an additional 2-3 minutes until heated through.
Serving the Dish

Garnish and Serve
Remove from heat, stir in the chopped fresh basil, and serve immediately. Optionally, sprinkle with additional Parmesan cheese if desired.
