Prepare the Sausage and Rice Filling
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage and cook until browned. Stir in the cooked rice and season with garlic powder, salt, black pepper, and paprika. Mix well and remove from heat.

Prepare the Chicken Breasts
Using a sharp knife, carefully slice a pocket into each chicken breast, making sure not to cut all the way through. Season the outside of each breast with salt, pepper, and paprika.
Stuffing and Cooking

Stuff the Chicken
Fill each chicken breast pocket with the sausage and rice mixture. Use string or toothpicks to secure the openings to prevent the filling from falling out.

Sear the Chicken
In a large oven-safe skillet, heat the remaining tablespoon of olive oil over medium-high heat. Sear the stuffed chicken breasts for about 3-4 minutes on each side until golden brown.

Bake the Chicken
Pour the chicken broth into the skillet around the chicken. Transfer the skillet to a preheated oven at 375°F (190°C) and bake for 20-25 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Rest and Serve
Once cooked, remove the skillet from the oven and let the chicken rest for 5 minutes before slicing. Garnish with fresh parsley and serve warm.
